The order will automatically move from SCHEDULED to NEW depending on your prep time. This order was scheduled for 4:30 with a 10 minute prep time. The merchant was re-prompted at 4:20 to start the order.

Or start preparing the order anytime. This might be the case if the customer showed up early and you'd like to start the order.
